Smoked Queso

Cook time 90 minutes



  • 1 pound of velveeta cheese
  • 8 ounces of cream cheese (Room temp)
  • 1 can of rotel tomatoes
  • 1 cup of poblano peppers diced
  • 1 cup of Onion diced
  • 1 pound of ground spicy italian sausage (Cook before adding)
  • 1 tablespoon of All Purpose seasoning
  • Sliced green onions for garnish
  • Tortilla chips



  • In an oven safe dish or cast iron add velveeta cheese, cream cheese, rotel tomatoes, poblano peppers and onions
  • Season the ingredients with all purpose seasoning
  • Place your queso on your smoker at 250 degrees
  • After 30 minutes mix the queso thoroughly and add spicy sausage
  • Let it cook for another hour and mix every 30 minutes
  • Remove from your smoker and season lightly with cannibal all purpose seasoning
  • Garnish with green onions
  • Plate up with some chips and enjoy!
