Breakfast Bowl

INGREDIENTS:

1 russet potato, diced

½ yellow onion, chopped

3 strips bacon, chopped

Half avocado, sliced

1 egg

Shredded white cheddar

Scallions to garnish

 

INSTRUCTIONS:

  1. Cook bacon in cast iron, then set aside
  2. Sautee potatoes and onion in cast iron with bacon grease
  3. Top with cheddar cheese and bake at 450 for 5 min or until cheese is melted
  4. Cook one egg any way you like it
  5. Remove from oven and top with cooked bacon, sliced avocado, cooked egg and scallions
