Berry Vinaigrette

INGREDIENTS:

Handful of raspberries (about 3oz)

Handful of blackberries (about 3oz)

5 or 6 large strawberries (tops removed)

1 TBSP of honey (or your preferred sweetener)

2 TBSP of rice wine vinegar (apple cider vinegar would work too)

Fresh juice from half a lemon

1 TBSP of EVOO

1 tsp of dried thyme

salt and pepper to taste

 

STEPS:

  1. Add ingredients to blender until smooth
  2. Add 1 – 2 TBSP of water at a time if you would like dressing to be thinner
  3. Strain through mesh strainer if you would like dressing to be removed of seeds
  4. Keep chilled in fridge
