Start of Oyster Season with Oysters Rockefeller

Ingredients
- 12 fresh oysters, in the shell
- 3 tablespoons unsalted butter
- 2 cloves garlic, finely minced
- 1 small shallot, finely minced
- 2 cups fresh spinach, finely chopped
- 2 tablespoons fresh parsley, finely chopped, plus more for garnish
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon black pepper
- ⅓ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- Rock salt or coarse kosher salt, for baking
- Lemon wedges, for serving
Directions
1. Prepare the oysters
Preheat oven to 450°F. Carefully shuck the oysters, keeping each oyster in the deeper half of its shell and preserving as much of the oyster liquor as possible.
Spread a thick layer of rock or coarse salt across a rimmed baking sheet. Nestle the oyster shells into the salt to keep them level while baking.
2. Make the Rockefeller filling
Melt 2 tablespoons of butter in a skillet over medium heat. Add the shallot and garlic and sauté for about 1–2 minutes, until softened and fragrant.
Add the chopped spinach and cook until wilted. Stir in the parsley, lemon juice, Worcestershire sauce, and black pepper. Remove from heat.
3. Make the crispy topping
In a small bowl, combine the panko breadcrumbs, Parmesan, olive oil, and remaining tablespoon of melted butter. Mix until the breadcrumbs are evenly coated.
4. Assemble
Spoon a small amount of the spinach mixture over each oyster. Top generously with the seasoned breadcrumb mixture.
5. Bake
Bake for 8–10 minutes, or until the oysters are cooked through and the topping is golden brown. For an extra-crispy finish like the oysters pictured, broil for the final 1–2 minutes, watching carefully to prevent burning.
6. Serve
Finish with freshly chopped parsley and serve immediately with lemon wedges.

A sturdy oyster knife makes shucking safer and gives you the leverage needed to open the shell while keeping the oyster intact. Once opened, use the blade to carefully separate the oyster from the top shell before adding the Rockefeller topping.
