Valentine’s Steak Dinner
Nothing says romance quite like a perfectly cooked steak, served with all the right accompaniments to make your Valentine’s Day dinner truly special. Juicy, tender, and packed with flavor, it’s the perfect centerpiece for an unforgettable evening. Keep reading for the best steak recipe to create a Valentine’s dinner that’s sure to wow!
Ingredients:
- 1-2lbs baby potatoes
- 1 sprig rosemary
- 2 sage leaves
- 2 sprigs thyme (reserve one or two for basting steak)
- 1 bunch asparagus
- 6-8oz peeled pearl onions
- 6-8oz wild mushrooms (regular baby belles will work fine)
- 6 cloves garlic, peeled
- Salt and pepper
- Butter
- Neutral oil
Instructions:
- Preheat oven to 400
- Boil potatoes until soft. Drain in colander and set aside for a few minutes. You want as much moisture gone as possible. Smash each potato using spatula or hands. Thinner = crispier. Let them rest again for a few minutes to let steam and moisture escape. Less liquid = more crispy.
- Drizzle olive oil over potatoes. Salt pepper to taste.
- Chop thyme (remember to reserve one or two sprigs for basting steak later), rosemary, and sage very finely. Sprinkle herbs on tops of potatoes. Roast in oven 35-45 minutes until your desired crispiness.
- Pull steak from fridge, pat dry with paper towels, and season with salt and pepper. Allow steak to come up to room temperature for 30 minutes.
- Prepare asparagus by snapping off woody ends. Drizzle with olive oil, salt and pepper. Roast in oven until desired doneness (all depends on thickness of asparagus).
- Trim mushrooms and halve pearl onions.
- Get a pan nice and hot, we used cast iron. Add a little oil to the pan, something neutral with a high smoke point like canola.
- Cook steak on first side about 3 minutes. Add garlic, butter, thyme to pan. Baste for roughly one to two more minutes. Flip steak and continue basting and cooking for another 4-5 minutes. Depending on thickness, this should get you close to medium rare. Adjust times as needed for your steak cut of choice.
- Pull steak, garlic, and herbs. Allow to rest 10-12 minutes.
- Add peeled onions and trimmed mushrooms to same pan using steak juices and butter to sauté and caramelized. Should take 10-15 minutes depending on size of onions and mushrooms.
- Remove from pan once brown and caramelized.
- Plate potatoes and asparagus.
- Slice steak against the grain and plate.
- Spoon mushrooms and onions over top of steak.
