Bacon Creamed Corn


  • 8 slices of bacon
  • 2 TBSP butter
  • 1/2 white onion – small diced
  • 4 ears of corn cut off the cob
  • 1/2 bag frozen corn
  • 2 cups heavy cream
  • 1 cup milk
  • 1 1/2 TBSP cornstarch
  • salt to taste


  1. Cut bacon into 1/2″ pieces with shears
  2. Place cut bacon into a large pot on medium heat and cook until crispy – stir repeatedly. Remove bacon from pot and drain on paper towels.
  3. Remove half the bacon fat and add butter to the pot, once melted add in the onion and cook until softened.
  4. Add raw and frozen corn to the pot until heated through and raw corn is slightly sauteed.
  5. Add the heavy cream and bring to a simmer.
  6. Whisk in cornstarch and milk and slowly pour into pot while stirring constantly.
  7. Cook for a few minutes until thickened.
  8. Fold in the cooked bacon and season with salt to taste
