Valentine’s Scallop Appetizer

Ingredients:
- 1 pomelo
- 1 orange, we used Cara Cara for the color
- Handful of shelled pistachios
3 U10 scallops (foot muscles removed) - Knob of butter
- Neutral flavored oil
- Olive oil
- Salt and pepper to taste
- Microgreens
Instructions:
- Hand chop pistachios, no food processor, you still want some decent size pieces.
- Supreme pomelo and orange. You’ll use 3-5 pieces per fruit during plating. Use a small torch to char the citrus for extra flavor (optional).
- Pat scallops dry with paper towels and make sure scallop foot muscles are removed.
- In a hot pan, add a little neutral oil. When it is hot, add scallops. Salt and pepper scallops. Add knob of butter for basting scallops. Cook scallops 3-5 minutes without flipping. Baste continuously until evenly cooked through. You want a good seared crust and to be opaque throughout.
- Remove from heat and place onto towel to drain excess oil/butter for just a moment.
- Plate scallops and citrus. Sprinkle chopped pistachio. Top with microgreens of choice. Drizzle with high quality EVOO to finish.
